Energy balls are quick and easy, and can be made with the natural ingredients of your choice. But overall, they are a great way of providing the body with energy, which is how they get their name. Here is a recipe for refreshing and delicious energy balls made from lemon and coconut.
Lemon coconut energy balls
The following recipe will make around 12 lemon coconut energy balls:
- 1 cup of cashew nuts
- 1 cup of grated coconut
- the juice of half a lemon
- 1 tablespoon of vanilla extract
- 1 tablespoon of maple syrup
- a little water
Blend all of the ingredients except for the coconut in a powerful blender, or stir them energetically with a wooden spoon.
Add just enough water to make a smooth paste, and use this paste to form small balls. Once they are ready, roll them in the grated coconut. Put them in the fridge for 2 to 3 hours before eating them.
If you don’t like cashew nuts, replace them with unsalted hazelnuts, walnuts or peanuts.
