Healthy snack recipe: lemon coconut energy balls

Energy balls are quick and easy, and can be made with the natural ingredients of your choice. But overall, they are a great way of providing the body with energy, which is how they get their name. Here is a recipe for refreshing and delicious energy balls made from lemon and coconut. 

Lemon coconut energy balls

The following recipe will make around 12 lemon coconut energy balls:

  • 1 cup of cashew nuts
  • 1 cup of grated coconut
  • the juice of half a lemon
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of maple syrup
  • a little water

Blend all of the ingredients except for the coconut in a powerful blender, or stir them energetically with a wooden spoon.

Add just enough water to make a smooth paste, and use this paste to form small balls. Once they are ready, roll them in the grated coconut. Put them in the fridge for 2 to 3 hours before eating them.

If you don’t like cashew nuts, replace them with unsalted hazelnuts, walnuts or peanuts.

Rich in vitamin C and antioxidants, lemon and other citrus fruits are effective for preventing certain types of cancer, particularly oesophageal cancer, stomach cancer, bowel cancer, mouth cancer and throat cancer.

Coconut milk is rich in fibre, vitamins, minerals, proteins and saturated fats, although the majority of saturated fats present in coconut come in the form of lauric acid, the main saturated fat in breast milk.
